My Sea Princess

I was browsing a lot of cake picture to get some idea for my next project. Finally, I decided on a simple yet a little difficult one; Sea Princess. Initially I wanted to do a mermaid sitting on a rock watching the fishes go by but the mermaid tail kept breaking. So I decided, I will just make it a simple princess instead of a mermaid. By the time I realized that I need to make the sea princess a little smaller, it was too late. She ended up taking up much more space than I had anticipated. As such, one of the starfish got covered by her skirt :(. Still, I loved the end product.

Basic Things You Need to Keep in Mind When Dealing with Fondants or Sugar Paste

The title is quite self explanatory.

1) Fondants dry very fast - so take what you need and keep the rest covered using an air tight container or cling wraps

2) Always have a bowl of icing sugar near you when you are working with fondants. You will need it when you are rolling out your fondants. Also, you will need them to dip your fingers in so that the fondant do not stick to your fingers while working.

3) When you are making figures that have 2 or more pieces, stick them together using daps of water. Use your fingers to apply or a brush.

4) You will tend to get lumps of icing sugar stuck to your fondant while rolling. Ensure that you sift your dusting sugar before you use them.

5) When you intend to color your fondant, ensure that you mix your colors well in advance. Otherwise you will find that you will not get consistent shades.

Have fun making your fondant and by following some simple guidelines, you should be making master pieces for your cakes soon enough. Practice makes perfect and that is so true with cake decorating.

Basic Fondant Recipe for Cake Coverings


This fondant made using this recipe will last up to a week if you keep it refrigerated in an air tight container.

500 Grm - Icing Sugar
2 Tbsp Corn Syrup (you can substitute sugar syrup if you really cannot find corn syrup)
1 Egg White

Sift the Icing sugar to remove any lumps and impurities
Make a well in the middle and pour the corn syrup and egg white in it
Knead it well such that it forms a smooth and silky texture

When working with fondants, always remember to take what you require in small quantity. This is because fondants tend to dry out quite easily which makes them difficult to handle.

Three tier New Year Cake

I have been busy lately learning the use of fondant dough in cake decorating. I tried a few recipes but was not quite satisfied. Then I decided, I will just pre-order fondant dough from the institute and just focus on the decoration instead. You know, it's best to let people who know the nuances of these things far better than I to do it. Also, focusing on things you can do will help to reduce the stress levels when it comes to cake decoration at least. So, finally, I managed to put together a three tier cake for new year.

The color schemes are used as per the instructions from my 4 yr old daughter and she helped me in arranging the color balls on the cake as well. Considering that this was my first attempt, I am quite happy with the way it turned out.

This is a three tier pineapple cake with pineapple and vanilla butter cream frosting with pineapple crush in between layers, covered in pineapple flavored fondant. Royal Icing is used to fuse all mini pieces together.

The bottom layer is a round cake and the top layer is a heart shaped cake. The third layer is made up of 4 mini cupcakes and a large cup cake.

I used gum paste fondants to create the purple flowers, yellow and white snow flakes, seashells, balls and the pink towers.
