Spicy Vegetable Pulao<br />
<br />
Basmati Rice soaked for about 1/2 hour in warm water, washed and drained - 1 cup<br />
Warm water - 2 cups<br />
<br />

Meanwhile, prepare the following:<br />
<br />
2 medium carrots - cut in circles<br />
6 - 8 medium beans - cut long pieces<br />
3-4 medium Cauliflower florets - seperate into small florets<br />
1 medium potato - dice into small pieces<br />
<br />
You may add peas, broccoli and any other veg you prefer.<br />
keep aside.<br />
<br />
2 tbsp Olive Pomace Oil<br />
5-6 medium Shallots<br />
1 medium spice chilly (add more if you want more spice)<br />
3-4 Curry leaves<br />
1 tsp ginger garlic paste<br />
<br />
1 tsp chilli powder<br />
1 tsp coriander powder<br />
1tsp pepper<br />
1/2 tsp garam masala<br />
a pinch turmeric powder<br />
<br />
In a non stick pan, add the oil and saute the shallots, chilli , ginger garlic paste and curry leaves.<br />
<br />
Add the cut vegetables and stir fry for about 3 minutes.<br />
<br />
Add salt and pepper as required.<br />
<br />
Add chilli powder, coriander powder, turmeric powder and garam masala and mix well.<br />
<br />
Add the warm water to the vegetables and let it boil.<br />
<br />
Add basmati rice and cook on low heat. Stir in the juice of half lemon if you prefer a tangy taste.<br />
<br />
Stir once in a while while cooking.<br />
<br />
The rice should be cooked in about 15 minutes. Depending, increase or reduce duration.<br />
<br />
Garnish and serve with Raita, Pappad , Pickle or Chutney as you prefer.<br />

There are 4 components to Nasi Ayam. However, it is one of the easiest recipe in this site. The 4 components of Nasi Ayam are :<br />
1) Chicken Soup<br />
2) Chilli Sauce / Curry<br />
3) Chicken Rice<br />
4) Fried Chicken<br />

Now let's go to the recipe to make these components and enjoy the yummy taste of this famous dish in the South East Asia.<br />
<br />
<b>1) Recipe Chicken Soup</b><br />

Oil - 1 Tbsp<br />
Ginger - 2 or 3 inch sliced thinly<br />
Chicken - 1/2 kg of Medium cuts <br />
Salt - apinch <br />
Water - enough to keep aside for a soup as well as to cook the rice later. roughly 1 liter should be more than enough.<br />
<br />
In a heavy bottom pan, pour the oil and saute the ginger till
golden brown. This is to make the stock fragrant. Add the water and let
it come to a rolling boil. Add Salt and the chicken and let it cook till tender.<br />
This should take about 15-20 minutes.<br />
Keep aside a bowl of soup and add 2 or 3 soup leaves.<br />
Save the rest for the chicken rice. <br />

<b>2) Chilli Sauce / Curry</b><br />

In a blender, place the following and blend well.<br />

Young Red Bell Pepper Chilli - 10 or 15 deseeded<br />
Tomato - 1 medium<br />
Shallots - 3 or 4 medium<br />
Garlic - 10 or 15<br />
Vinegar - 1 or 2 Tbsp<br />
Salt - a pinch<br />
Sugar - 1 Tsp <br />

This sauce is spice and if the spice is too much to handle, add water t o make it less concentrated as required.<br />
Take 1 bowl and keep aside and keep the remaining in the blend the marinate for the chicken.<br />

Chicken Stock - 3 Cups<br />

Cook in a rice cooker<br />

In the blender where the chili sauce is reserved earlier, add the following and blend well;<br />

Black Pepper- 3 or 4 Tbsp<br />
Dark Black Soy Sauce - 8 or 10 drops<br />
Light Soy Sauce - a few drops<br />
Chilli Sauce - 1 Tbsp<br />
<br />
Marinate the chicken in it and leave for 5 mins.<br />

In a pan, add 2 Tbsp of oil and fry the chicken till golden brown <br />

Most of the shops carry Eclairs that are filled with Creme Pattissiere. The recipe I tried out, recommended a fresh cream filling. However, I was out of heavy cream. Therefore, I decided to use a custard filling instead.<br />
This recipe is from the book Success With Pastry, by Catherine Atkinson. I have used the book version of choux pastry and the chocolate topping. The custard recipe is from my pineapple flan recipe.<br />
<br />
<b>Choux Pastry</b><br />

a pinch of salt <br />
50 grm butter, diced<br />
150 ml water<br />
2 eggs slightly beaten (you may not need all of it)<br />

Pre heat oven to 200 deg C<br />
Grease baking sheet with butter and keep aside<br />
<br />
Sift the flour and salt<br />
In a heavy bottom pan, heat the butter and water gently till the butter melts. Ensure that you do not bring this to boil before the butter has completely melted.<br />
<br />
Increase heat and bring to a rolling boil.<br />
Remove pan from the heat and add the flour to it immediately<br />
Stir vigorously with a wooden spoon or spatula till the flour is fully incorporated into the liquid<br />
Return this to a low heat.<br />
Beat the mixture till it comes off easily from the sides of the pan.<br />

remove from heat and cool for 2-3 mins<br />

Add the beaten eggs slowly, incorporating after each addition, till you get a smooth, shiny paste which is thick enough to hold its shape. You need not use the entire mixture for this.<br />
<br />
Transfer this pastry into a piping bag and pipe onto the baking sheet to desired length.<br />
Use a wet knife to cut off ends.<br />

Bake for 25-30 mins until golden brown. The pastry would puff up.<br />
Remove from the oven and make a slit in the middle, allowing the heat to escape.<br />
Bring your oven temperature down to 180 deg C and cook this for a further 5 mins.<br />

Keep aside and cool. <br />
<br />
<b>Custard</b><br />
This custard is best when you make it the day before and keep in the fridge to chill.<br />
<br />
500 ml milk<br />

2 eggs - yolk and white seperated<br />
3 tbsp custard powder<br />
1 tsp vanilla essence <br />

mix the cornflour in a 3 tbsp milk.<br />
add the egg yolk and mix well.<br />
<br />
combine the rest of the milk and 90 grm sugar in a heavy bottom pan.<br />

stirring continuously, bring the above to boil.<br />
you should get a smooth consistency and your custard to ready to removed from heat if it coats the back of a spoon nicely.<br />

add vanilla essence and keep aside to cool<br />

<b>This is a recipe I tried out from Sanjeev Kapoor's Party Cooking Book. Turned out delicious but with a little zilch. The ice cream turned out to be a little icy. I believe this could be solved if you use full cream milk instead of low fat or normal milk which the book suggests. </b><br />

2 Med ripe mangoes<br />1 cup Coconut Milk<br />2 tbsp Grated Coconut<br />2 tsp Lemon Juice<br />1 cup Full Cream Milk<br />3 tbsp Cornflour<br />1/2 cup Sugar<br />1/4 tsp Salt<br />2 Egg Whites<br />1/2 Cup Cream<br /><br /><br />Mix the coconut milk and 1/2 qty of full cream milk in a saucepan<br /><br />mix cornflour, sugar and salt with the remaining full cream milk and add to the saucepan.<br /><br />cook over low heat, stirring continuously till the mixture is thick. You should be able to see a layer form on the back of your spoon when you lift your spoon<br /><br />Stir in the grated coconut into the saucepan and set aside to cool. This will take about 5 mins.<br /><br />Meanwhile, Peel Mangoes and puree the pulp with lemon juice in a blender.<br /><br />Add this to the saucepan once it is cool.<br /><br />Pour this mixture into an airtight container and keep in the freezer till it is half frozen. Depending on the temperature in your freezer, this should be around 2-4 hrs.<br /><br />Check once in a while to make sure you do not freeze this completely.<br /><br />Once you are ready with your half frozen mango mixture, <br /><br />beat the egg whites till they form soft peaks and beat the cream separately till thick.<br /><br />Transfer the half frozen mango mixture to a bowl and fold in the ehh whites followed by the cream until you get a smooth mixture.<br /><br />pour it back into the air tight container and freeze for a further 3 hours.<br /><br />Remove from the freezer and beat tis mixture till it is smooth again. <br /><br />Return to freezer.<br /><br />Your mango and coconut ice cream will be ready by the next 6 hrs at most.</div>Amegahttp://www.blogger.com/profile/08954901368952747072noreply@blogger.com0tag:blogger.com,1999:blog-858219782152568288.post-82095868813388521312012-03-04T04:35:00.001-08:002012-03-04T04:35:49.842-08:00Chocolate Cake with Semi Sweet Chocolate Butter cream Frosting<div dir="ltr" style="text-align: left;" trbidi="on">
I was feeling too lazy to start from scratch for this but at the same time I wanted to make something. So I took the PillsBury Chocolate Cake mix and made the cake. Then I thought, why not try using my chocolate butter cream frosting and see how it tastes like. Usually I use cake mix when I am strapped for time and have visitors and they never get the frosting as well ;)<br />

I cut the cake into 3 layers and placed the frosting (that was so yummy I could just eat it on its own :D( well, I did when I was scraping down the bowl)) on the layers and the sides. I had some leftovers which I got while I leveled the top for consistency. Crumbling them up gave a very Black Forest kind of look to the otherwise boring ,looking cake. A little twirl using the icing tool gave it the perfect look.<br />

Have been lazy for a while since my last post largely because of my health. The weather is such and I have been having on and off fever, sore throat and what not. However, I have been experimenting with cakes as well. I tried out cake pops and cake bites with my usual cake and cup cake recipes.<br />
<br />
Cake Bites are cute miniature cakes that are presented as bite sized pieces. Actually I was so in love with this idea that I wanted to try it out and I did. I made vanilla cake, butter cream frosting and melted some chocolate. With some colored sugar sprinkles and sugar pearls, I was good to go.<br />

I was browsing a lot of cake picture to get some idea for my next project. Finally, I decided on a simple yet a little difficult one; Sea Princess. Initially I wanted to do a mermaid sitting on a rock watching the fishes go by but the mermaid tail kept breaking. So I decided, I will just make it a simple princess instead of a mermaid. By the time I realized that I need to make the sea princess a little smaller, it was too late. She ended up taking up much more space than I had anticipated. As such, one of the starfish got covered by her skirt :(. Still, I loved the end product.<br />

I have been busy lately learning the use of fondant dough in cake decorating. I tried a few recipes but was not quite satisfied. Then I decided, I will just pre-order fondant dough from the institute and just focus on the decoration instead. You know, it's best to let people who know the nuances of these things far better than I to do it. Also, focusing on things you can do will help to reduce the stress levels when it comes to cake decoration at least. So, finally, I managed to put together a three tier cake for new year.<br />

The color schemes are used as per the instructions from my 4 yr old daughter and she helped me in arranging the color balls on the cake as well. Considering that this was my first attempt, I am quite happy with the way it turned out.<br />
<br />
This is a three tier pineapple cake with pineapple and vanilla butter cream frosting with pineapple crush in between layers, covered in pineapple flavored fondant. Royal Icing is used to fuse all mini pieces together.<br />
<br />
The bottom layer is a round cake and the top layer is a heart shaped cake. The third layer is made up of 4 mini cupcakes and a large cup cake.<br />
<br />
I used gum paste fondants to create the purple flowers, yellow and white snow flakes, seashells, balls and the pink towers.<br />

As per my <a href="http://mykitchenexperimentsandrecipes.blogspot.com/2011/12/turn-hobby-into-business-my-first.html" target="_blank"><b>My First Business Venture</b></a> response, I decided to set up a stall on Christmas Day at my flat for the residents. It was a 5pm - 9pm thing and a Sunday at that. I decided to bake my cup cakes at night because Sundays are usually "Generator ON " day. The load shedding on Sundays is horrible especially because the oven will not work properly. The voltage fluctuations vary so much that it will keep coming and going. <br />
<br />
So, I started baking at 1am and finished at around 5am. I baked vanilla and chocolate cupcakes for the occasion. It was already decide in my mind that I would try out different recipes and pick the best two to avoid pricing confusions later on. So after reading and trying, vanilla and chocolate seemed like a safe bet especially since I was strapped for time in the mornings through afternoon. So with the cupcakes cooked and kept to cool, I finished all my other chores and started on my icing at 2pm.<br />
<br />
We reached the venue at 6pm and from then on, I was so thrilled and surprised by the response I got. By the time we finished at 9pm, all the cupcakes were sold and people were asking for more. I know! I should have made more! ;)<br />
<br />
I was feeling like, YES, this is REAL! and I was so so so happy. Not only did I cover all the expenses, I made a handsome profit as well. Although I could not take pics of the venue as I was too busy and the night time ones I took are no good, I'll share with you all the fruits of my labor here.<br />

Saute Ladies Finger in oil till stickiness of the ladies finger is no more. Keep aside for later use.<br />

This is a recipe I got from my sis as I was discussing making black forest cup cakes.<br />
<br />
<b>Black Forest Cake Recipe </b><br />
<br />
2 -1/8 cups all purpose flour<br />
2 cups powdered white sugar<br />
3/4 cups cocoa powder (unsweetened)<br />
1 1/2 tsp Baking Powder<br />
3/4 tsp Baking Soda<br />
1/4 tsp salt<br />
<br />
Combine all the above ingredients and sift them to remove impurities and lumps<br />
<br />
In another bowl, whisk<br />
1 cup milk<br />
1/2 cup veg oil<br />
1 tsp vanilla essence<br />
3 eggs<br />
<br />
Now add in the flour mixture slowly, incorporating each time well to form a smooth batter<br />
Should you see lumps, give a quick whisk with an electric beater just enough to remove the lumps.<br />
<br />
Cake Batter is ready.<br />
<br />
Divide batter equally into 2 tins.<br />
<br />
Pre-Heat Oven at 175 deg C or 350 deg F and bake the cakes for 35-40 minutes.<br />
<br />
Once the cake is ready, slice the cakes into half<br />
<br />
Remove crumbs from the sides and the top for decoration and keep aside<br />
<br />

While the cake is still int he oven, you can prepare your cherry syrup and icing.<br />

<b>Recipe Cherry Syrup for Black Forest Cake</b><br />
<br />
2 Cans cherries (pitted)<br />
1 cup icing sugar or powdered sugar<br />
14 cup cornstarch (if you do not have corn starch, make sugar syrup instead)<br />
1tsp vanilla extract<br />
<br />
Combine all the above into a heavy bottomed non stick pan and reduce over medium flame till the mixture thickens. Remove from heat and allow it to cool.<br />

Place icing on top and use a palette knife to run over it to get a nice finishing.<br />

I have not posted something in the past few days because I got into something I am really excited about! I am selling cupcakes in my neighborhood! It's been 2 days officially and the satisfaction, apart form the income is tremendous! I was not so lucky on my first day though.<br />
<br />
At where I stay, it is difficult to find proper baking items for a start and all the more difficult is to find good packaging items. I had to deliver my cupcakes in a cake box, which I though was a good idea. Unfortunately, I completely forgot about the possibility of the neighborhood ants helping themselves to a serving or two as well. So, finally I went down to the institute and got some cupcake holders. Now, that is going to keep the ant away for good now! Still, I am covering costs and making profits as well.<br />

Today, I attended Short Home Baking Course at Institute of Baking and Cake Art. Apart from teaching us the basics of baking as to why we use certain ingredients in the recipe and how to substitute we had practical session as well. We were taught how to perfect puff pastry, make pineapple flan cake, tutti fruitty biscuits, Make Dahlia Bread and make Tea Time Cakes. There were about 10 of us at the center for the course and we all took turns to make the items. It was good fun and we had some pretty good time.<br />
<br />
I plan to practice and perfect puff pastry tomorrow. I will share with how it went when I am done. Meanwhile I will upload pics from today's session just so you can get the feel of it. I took them with my phone and my battery ran low by the time the pineapple flan cake came together. It was lovely though. I asked another lady who attended the course with me to post me some of the pics she took. Hopefully, I will post them all as soon as possible.<br />

Home Made Stuffs are amazing. I love home made stuff mainly because I can control what goes in it; freshness, calories, cleanliness and so on. Usually when we intend to make pizza, we normally buy Pizza Base from the nearby supermarket, top it with Pizza Sauce (also from the supermarket), place toppings we desire and then comes the mozzarella cheese. Immediately take them out and put them in ice cold water. Peel off the skin and blend them. If you would prefer to take out the seeds, do so)</div>

Flour - 200grm<br />
Yeast - 1Tbsp<br />
Salt - 1/2 Tsp<br />
Sugar - 1 Tsp<br />
Water - as required<br />

In a bowl, add all the ingredients and mix together.<br />
Add water to get a smooth and soft dough.<br />
Keep for 30 minutes.<br />
<br />
Roll the dough out into a circle (not too thin) and place this on a baking tin or tawa.<br />
Prick with a fork all over so that the dough does not rise while in the oven.<br />
Keep for 5 minutes.<br />

Pre heat oven at 200 Deg C <br />
Once the oven beeps, bakethe dough in the oven for 8 minutes.<br />

Your Pizza Base is Ready<br />

Now, let the base cool while you prepare the toppings.<br />
<br />
You can place as much toppings as you desire. I prefer to have tomatoes, capsicum, tandoori chicken pieces, pineapple, onions and button mushrooms.<br />

Mozzarella Cheese - 150 grm.<br />

On your pizza base, spread the Home Made Pizza Sauce, add a few toppings, top it up with some salt, pepper and oregano. Follow this by adding some cheese. Add more toppings, followed by salt, pepper and oregano and cheese.<br />
<br />
Pre heat oven at 250 Deg C and bake the pizza for 8 minutes or till the cheese has set on the pizza.<br />

Castor Sugar - 1 cup<br />
Vanilla Essence - 1 tsp<br />
Eggs - 4 (at room temp)<br />
Self Raising Flour - 2 cups<br />
Milk - 2/3 cups (at room temp)<br />
Coffee Powder - 1/3 cup<br />

Pre heat oven at 180 deg<br />

Sift flour and coffee powder and keep aside <br />
Cream butter and sugar till soft and fluffy<br />
Add in vanilla essence<br />
Add eggs one at a time and beat well<br />
Add in the flour and coffee mix and gently fold in till well mixed<br />
<br />
Pour the mixture in greased tin<br />
<br />
Place in the pre heated oven and bake for 30 minutes<br />

This is a very easy and quick dish to fix. You can serve this up with more veggies added as well. Well, if you are really in a hurry, you can miss the veggies as well ;)<br />
Semolina - approx 1 cup<br />
Veg Oil - 4 Tbsp<br />
Mustard Seeds - approx 1 tsp<br />
Curry Leaves - 4<br />
Green Chilly - 2 Medium<br />
Onion - 1<br />
Big
Corn - 1/2 cup<br />
Baby Beans - 1/2 cup<br />
Carrot - 1/4 cup (optional for color sake)<br />
Water - 2.5 cups<br />
Lemon Juice - 1 tsp<br />
Red Chilli Powder - a pinch<br />
Salt - as required<br />
<br />
Roast Semolina and keep aside<br />
In veg oil, add mustard seeds.<br />
When the popping stops, add in the curry leaves, onions and salt.<br />
Saute for a while and add in the corn,carrots and baby beans.<br />
Fry till they are cooked.<br />
Add in chilli and chilli powder.<br />
Add water and lime juice.<br />
When the water is about to boil, add semolina bit by bit, stirring continuously. (otherwise, lumps will form)<br />
